I made these biscuits for my students to keep them engaged during their research project on New Zealand culture. I asked my New Zealander colleague what her favourite recipe was, and she couldn’t wait to tell me all about the amazing Afghan cookie, a true New Zealand speciality rather than an Australian hybrid. I was sceptical about a cookie largely made from butter, but they are very good (if a little rich), despite mine looking more like cow pats than the picture in the recipe book! They’re well worth a try if you want a quick and easy bake.  Enjoy! – Rachel
